We breed new eggplants for dense, meaty flesh that resists oil and has fewer bitter seeds, thus frying up well for diverse culinary experiences. ‘Green Knight’ marches forth with robust crops of mildly-sweet, succulent, white-fleshed fruits. Pairs nicely with our popular pale-skinned ‘White Knight’. Both taste deliciously mild in vegetarian, Cajun and Indian dishes. Prolific 34–36" plants produce plenty of 7 x 1½" jade green fruits. Plants—both flowers and fruit—add a unique look to any garden. F1 Hybrid An F1 hybrid is created by crossing two different parent plants to combine their best qualities.
