Vietnamese Salad

Put fresh mint, basil and cilantro to use in this colorful salad loaded with crunchy vegetables. See how many of the ingredients you can harvest from your own backyard!

Ingredients

For the Dressing:

  • 2 tablespoons lime juice
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon fish sauce
  • 1 tablespoon granulated sugar
  • 1 tablespoon canola oil
  • 1 tablespoon chili garlic sauce


For the Salad:

  • 1 red bell pepper, thinly sliced
  • 1 cucumber, thinly sliced
  • 1 carrot, julienned
  • ½ small red onion, thinly sliced
  • Assorted lettuce leaves
  • Handfuls of mint, basil, and  cilantro leaves

Instructions

  1. In a small bowl, whisk together lime juice, rice wine vinegar, fish sauce, sugar, canola oil, and chili garlic sauce until well combined. Set aside.
  2. In a large bowl, combine the sliced bell pepper, cucumber, carrot, red onion, assorted lettuce, and fresh herbs (mint, basil, and cilantro).
  3. Drizzle the dressing over the salad just before serving. Toss gently to coat and enjoy.
