Ingredients
For the Roasted Vegetables:
- 2 sweet potatoes, chopped
- 1 large onion, sliced
- 1 small head cauliflower, cut into florets
- 2 tablespoons olive oil
- 1 tablespoon curry powder
- ½ teaspoon salt (plus more to taste)
- 1 tablespoon sesame oil
- 1 tablespoon chili garlic paste
For Serving:
- 2 cups cooked brown rice
- 1 avocado, sliced
- 2 scallions, thinly sliced
- Drizzle of sesame oil, for garnish
- Sesame seeds, for garnish
- Flaky salt, to taste
Instructions
- Begin by tossing chopped sweet potatoes and sliced onions in a bowl with olive oil, curry powder, and salt. In a separate bowl, combine cauliflower florets with sesame oil and chili garlic paste.
- Next, spread both mixtures evenly on a rimmed baking sheet. Place the baking sheet in a preheated oven set to 400°F and roast for 25 to 30 minutes, or until the vegetables are softened and slightly caramelized.
- To serve, place the roasted vegetables over brown rice and top with sliced avocado and scallions. For added flavor, garnish with additional sesame oil, sesame seeds, and flaky salt.
