
Use freshly harvested turnips to make this flavorful lentil dal. For quick cooked lentils, use your Instant Pot!
Serves 4 as a meal or appetizer.
Ingredients
- 1 cup red lentils, rinsed
- ½ cup water (for cooking lentils)
- 1 tablespoon olive oil
- 1 medium onion, diced
- 1-inch knob fresh ginger, minced
- 4 cloves garlic, minced
- 1 teaspoon brown mustard seeds
- ½ teaspoon salt (plus more to taste)
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- ½ teaspoon ground turmeric
- ½ teaspoon curry powder
- 2 cups turnips, sliced
- ½ to 1 cup vegetable broth (plus more if needed for consistency)
- Fresh cilantro, for garnish
- Plain yogurt, for serving
- Salt and pepper, to taste
Instructions
- Add rinsed red lentils and ½ cup water to the Instant Pot. Cook on Manual for 5 minutes. Once done, allow natural release or quick release carefully.
- While lentils cook, heat olive oil in a large skillet over medium heat. Sauté diced onion, minced ginger, and minced garlic until softened. Add mustard seeds, salt, cumin, coriander, turmeric, and curry powder. Cook for 1 minute until fragrant.
- Stir in sliced turnips and ½ to 1 cup vegetable broth. Simmer for 5–8 minutes until turnips are just tender.
- Mix in the cooked lentils. Adjust consistency with additional broth if needed. Season with salt and pepper to taste.
- Serve warm, garnished with fresh cilantro and a dollop of plain yogurt.
