Ingredients

  • 1 cup red lentils, rinsed
  • ½ cup water (for cooking lentils)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1-inch knob fresh ginger, minced
  • 4 cloves garlic, minced
  • 1 teaspoon brown mustard seeds
  • ½ teaspoon salt (plus more to taste)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon ground turmeric
  • ½ teaspoon curry powder
  • 2 cups turnips, sliced
  • ½ to 1 cup vegetable broth (plus more if needed for consistency)

Instructions

  • Add rinsed red lentils and ½ cup water to the Instant Pot. Cook on Manual for 5 minutes. Once done, allow natural release or quick release carefully.

  • Stir in sliced turnips and ½ to 1 cup vegetable broth. Simmer for 5–8 minutes until turnips are just tender.
  • Mix in the cooked lentils. Adjust consistency with additional broth if needed. Season with salt and pepper to taste.
  • Serve warm, garnished with fresh cilantro and a dollop of plain yogurt.
