
The whole family will want seconds of this hearty weeknight meal.
Ingredients
- 1 lb ground turkey
- 1 yellow onion, diced
- 1 small butternut squash, peeled and diced
- A few cloves of garlic, minced
- Olive oil
- 1 Tbsp cumin
- 1 Tbsp coriander
- 1 Tbsp apple cider vinegar
- 1 can of white beans, drained
- 2 cups chicken stock
- Salt and pepper, to taste
- Chopped cilantro
Instructions
- Heat olive oil in a Dutch oven over medium heat. Add ground turkey, diced onion, diced butternut squash, and minced garlic. Cook until turkey is browned.
- Mix in cumin, coriander, and apple cider vinegar. Sauté for 1–2 minutes until fragrent.
- Add in drained white beans and chicken stock. Stir to combine and bring to a simmer. Cook uncovered for 20–25 minutes until the butternut squash is tender.
- Season with salt and pepper. Garnish with chopped cilantro before serving.
