Turkey Butternut Chili

Turkey Butternut Chili Recipe

The whole family will want seconds of this hearty weeknight meal.

Ingredients

  • 1 lb ground turkey
  • 1 yellow onion, diced
  • 1 small butternut squash, peeled and diced
  • A few cloves of garlic, minced
  • Olive oil
  • 1 Tbsp cumin
  • 1 Tbsp coriander
  • 1 Tbsp apple cider vinegar
  • 1 can of white beans, drained
  • 2 cups chicken stock
  • Salt and pepper, to taste
  • Chopped cilantro

Instructions

  1. Heat olive oil in a Dutch oven over medium heat. Add ground turkey, diced onion, diced butternut squash, and minced garlic. Cook until turkey is browned.
  2. Mix in cumin, coriander, and apple cider vinegar. Sauté for 1–2 minutes until fragrent.
  3. Add in drained white beans and chicken stock. Stir to combine and bring to a simmer. Cook uncovered for 20–25 minutes until the butternut squash is tender.
  4. Season with salt and pepper. Garnish with chopped cilantro before serving.
