Sheet Pan Pork Chops

Grainy mustard, apples and Brussels sprouts turn a pack of pork chops into a hearty meal.

Ingredients

  • 2 large bone-in pork chops
  • 2 apples, cored and cut into wedges
  • 1 large onion, peeled and cut into wedges
  • 2 cloves garlic, thinly sliced
  • 2 cups Brussels sprouts, large ones halved
  • Olive oil
  • Salt and pepper
  • 2 tablespoons grainy mustard

Instructions

  1. Preheat your oven to 425°F.
  2. Season both sides of the pork chops with salt and pepper then place them on a greased sheet pan.
  3. Add apple wedges, onion wedges, sliced garlic, and Brussels sprouts around the pork chops on the pan.
  4. Drizzle everything with olive oil, salt and pepper. Roast in the oven for 45 minutes until the pork is cooked through and the vegetables are caramelized.
  5. Transfer the pork chops to a plate. Stir the grainy mustard into the vegetables and juices on the sheet pan.
  6. Serve the pork chops over the roasted vegetables and drizzle any remaining juices from the pan over the top.
