
Grainy mustard, apples and Brussels sprouts turn a pack of pork chops into a hearty meal.
Ingredients
- 2 large bone-in pork chops
- 2 apples, cored and cut into wedges
- 1 large onion, peeled and cut into wedges
- 2 cloves garlic, thinly sliced
- 2 cups Brussels sprouts, large ones halved
- Olive oil
- Salt and pepper
- 2 tablespoons grainy mustard
Instructions
- Preheat your oven to 425°F.
- Season both sides of the pork chops with salt and pepper then place them on a greased sheet pan.
- Add apple wedges, onion wedges, sliced garlic, and Brussels sprouts around the pork chops on the pan.
- Drizzle everything with olive oil, salt and pepper. Roast in the oven for 45 minutes until the pork is cooked through and the vegetables are caramelized.
- Transfer the pork chops to a plate. Stir the grainy mustard into the vegetables and juices on the sheet pan.
- Serve the pork chops over the roasted vegetables and drizzle any remaining juices from the pan over the top.
