
Hummus isn’t the only pita chip companion. Use your carrot harvest to whip up this delicious alternative.
Ingredients
- 4 lbs chopped carrots
- ½ medium chopped onion
- 4 cloves garlic
- ½ cup to 1 cup olive oil + 4 Tbs
- 1 Tbs za’atar
- ½ tsp ground coriander
- ½ tsp garlic powder
- ¼ tsp ground cinnamon
- Juice of ½ lemon
- 2 Tbs tahini
- Salt and pepper to taste
- Fresh cilantro
Instructions
- Combine chopped carrots, onion, garlic, olive oil, za’atar, ground coriander, garlic powder and ground cinnamon. Roast at 400 degrees F for 35-40 minutes until tender. Let it cool.
- In a food processor or blender, combine carrot mixture with lemon juice, ½ cup to 1 cup olive oil and tahini, adding more olive oil or water to reach desired consistency.
- Season to taste with salt and pepper and garnish with more olive oil, za’atar and fresh cilantro. Serve with pita chips or your favorite crackers.
