
Slice and simmer! Long beans are a delight in this quick one-skillet supper.
Ingredients
- 1 small knob of ginger, peeled and cut into matchsticks
- 4 cloves garlic, thinly sliced
- 1 shallot, diced
- ½ lb ground pork
- 2 Tbs olive oil
- 1½ lb long beans, trimmed and cut into long pieces
- ½ cup stock
- 1 Tbs soy sauce
- ½ tsp salt
- ¼ cup oyster sauce
- Sesame seeds
Intsructions
- In a large skillet over medium heat, sauté ginger, garlic, shallot and ground pork in olive oil. Break up pork with a wooden spoon or spatula into small pieces and cook for about 6-8 minutes or until lightly browned.
- Add long beans and sauté 1 minute. Add stock, soy sauce, salt and oyster sauce; bring to a simmer.
- Cover and simmer for 6-10 minutes or until beans are tender but still a bit crisp. Garnish with sesame seeds.
