Peas, Greens & Steak Stir Fry

Peas, Greens & Steak Stir Fry Recipe

Toss crisp snow peas with chopped greens, such as spinach or beet greens, to prepare this springy dish.

Ingredients

  • 10 oz thinly sliced sirloin or NY strip steak
  • 1 tbsp olive oil
  • 3 garlic cloves, thinly sliced
  • 1 small knob of ginger, peeled and julienned
  • 1 small red onion, sliced
  • 2 cups snow peas
  • 1 large handful chopped greens (spinach, beet greens, etc.)
  • ½ tsp salt
  • 2 tbsp sesame oil
  • 1 tbsp soy sauce
  • Sesame seeds, for garnish

Instructions

  1. Heat olive oil in a hot pan. Add the sliced steak and sear on each side until browned. Remove to a plate and set aside.
  2. In the same pan, add garlic, ginger, and red onion. Cook over medium-high heat for a few minutes, until the onions are tender. Add a little more oil if the garlic begins to brown too quickly.
  3. Add snow peas and chopped greens to the pan. Sauté until just wilted.
  4. Stir in salt, sesame oil, soy sauce, and a sprinkle of sesame seeds. Toss to coat everything evenly.
  5. Return the steak to the pan to warm through. Serve the stir fry over rice and garnish with extra sesame seeds if desired.
