
Toss crisp snow peas with chopped greens, such as spinach or beet greens, to prepare this springy dish.
Ingredients
- 10 oz thinly sliced sirloin or NY strip steak
- 1 tbsp olive oil
- 3 garlic cloves, thinly sliced
- 1 small knob of ginger, peeled and julienned
- 1 small red onion, sliced
- 2 cups snow peas
- 1 large handful chopped greens (spinach, beet greens, etc.)
- ½ tsp salt
- 2 tbsp sesame oil
- 1 tbsp soy sauce
- Sesame seeds, for garnish
Instructions
- Heat olive oil in a hot pan. Add the sliced steak and sear on each side until browned. Remove to a plate and set aside.
- In the same pan, add garlic, ginger, and red onion. Cook over medium-high heat for a few minutes, until the onions are tender. Add a little more oil if the garlic begins to brown too quickly.
- Add snow peas and chopped greens to the pan. Sauté until just wilted.
- Stir in salt, sesame oil, soy sauce, and a sprinkle of sesame seeds. Toss to coat everything evenly.
- Return the steak to the pan to warm through. Serve the stir fry over rice and garnish with extra sesame seeds if desired.
