Peach & Blackberry Skillet Crumble Recipe

Is there anything sweeter than a fruit crumble straight out of the oven? Nope, not if you’ve tried this summery skillet dessert.

Ingredients

For filling:

  • 3 sliced peaches
  • 6oz blackberries
  • 1 lemon, zest and juice
  • 1 Tbs granulated sugar
  • 1 Tbs flour
  • ½ tsp ground ginger
  • ½ tsp ground cinnamon
  • Pinch of salt

For topping:

  • 4 Tbs unsalted butter, cubed
  • ½ cup rolled oats
  • ½ cup flour
  • ½ tsp salt
  • 1 tsp vanilla
  • 3 Tbs brown sugar
  • Vanilla ice cream for serving

Instructions

  1. In a cast-iron skillet, combine sliced peaches and blackberries with sugar, flour, a pinch of salt, ground ginger, ground cinnamon, lemon zest, and lemon juice. Toss until the fruit is evenly coated.
  2. In a small bowl, combine cubed butter, rolled oats, flour, brown sugar, salt, and a splash of vanilla. Use your fingers or a pastry cutter to work the butter into the mixture until it forms small, crumbly chunks.
  3. Sprinkle the crumble evenly over the fruit, then bake at 400°F for about 40 minutes, or until the fruit is bubbly and the topping is golden brown. Serve warm with a scoop of vanilla ice cream for the perfect finish.
