Pea Salad

Serve a side dish of delightful spring peas, fresh-picked from your backyard.

Ingredients

  • 2 cups fresh sugar snap or snow peas
  • 1-2 tablespoons sesame oil
  • Salt, to taste
  • 1 tablespoon toasted sesame seeds (for garnish)

Instructions

  1. Rinse the sugar snap or snow peas thoroughly and trim the ends. Pat them dry to promote even cooking.
  2. Heat sesame oil in a large skillet or wok over high heat until shimmering but not smoking. Add the peas in a single layer and sauté for 2–3 minutes, stirring frequently, until they’re tender-crisp and bright green. Be careful not to overcook—they should retain a slight crunch.
  3. Season with salt to taste, then transfer to a serving dish and garnish with toasted sesame seeds for extra flavor and texture.
