Ingredients
- 2 cups fresh sugar snap or snow peas
- 1-2 tablespoons sesame oil
- Salt, to taste
- 1 tablespoon toasted sesame seeds (for garnish)
Instructions
- Rinse the sugar snap or snow peas thoroughly and trim the ends. Pat them dry to promote even cooking.
- Heat sesame oil in a large skillet or wok over high heat until shimmering but not smoking. Add the peas in a single layer and sauté for 2–3 minutes, stirring frequently, until they’re tender-crisp and bright green. Be careful not to overcook—they should retain a slight crunch.
- Season with salt to taste, then transfer to a serving dish and garnish with toasted sesame seeds for extra flavor and texture.
