
When life gives you lemons, make this delicious orzo pasta dish!
Ingredients
- 1lb ground lamb
- 1 small red onion, diced
- 1 tsp salt and pepper
- 3 cloves garlic, grated
- ½ tsp ground coriander
- ½ tsp ground cumin
- 4 Tbs chopped dill
- ¼ cup crumbled feta
- Orzo pasta
- 1 lemon
- Olive oil
- 1 cup yogurt
Instructions
- In a large bowl, add ground lamb, diced red onion, salt, pepper, grated garlic, ground coriander, ground cumin, chopped dill, and crumbled feta. Mix until fully combined.
- Form the mixture into about 21 meatballs, using 2 tablespoons per ball. Arrange them on a greased sheet pan and bake at 400°F for 20–25 minutes, until browned and cooked through.
- While the meatballs are in the oven, cook orzo according to package directions. Drain and return to the pot.
- Add the lemon zest and juice, a pinch of salt, and a few tablespoons of olive oil. Stir to combine.
- In a small bowl, mix yogurt with grated garlic and a pinch of salt.
- Serve the meatballs over the lemon orzo with a dollop of garlicky yogurt. Garnish with extra dill, if desired.
