
Use sprigs of rosemary and thyme from your herb garden for this fresh cast iron dinner.
Ingredients
- 4–6 chicken thighs
- 1 tablespoon oil
- 2 small green apples, cored and cut into thick wedges
- 1 large red onion, cut into wedges
- Salt and pepper, to taste
- 1 cup chicken stock
- 2 tablespoons butter
- Fresh rosemary and thyme sprigs
- ¼ cup dried cranberries
Instructions
- In a cast iron pan, sauté chicken thighs in oil on each side until browned, about 4-6 minutes. Remove and set aside.
- To the pan, add green apples and red onion. Season well with salt and pepper, then return the chicken to the pan.
- Add chicken stock, butter, sprigs of fresh rosemary and thyme. Sprinkle dried cranberries all around the pan and heat in 400 degree F oven for 15 minutes or until chicken is cooked through.
