Cranberry Apple Chicken Thighs

Cranberry apple chicken thighs in a cast iorn skillet.

Use sprigs of rosemary and thyme from your herb garden for this fresh cast iron dinner.

Ingredients

  • 4–6 chicken thighs
  • 1 tablespoon oil
  • 2 small green apples, cored and cut into thick wedges
  • 1 large red onion, cut into wedges
  • Salt and pepper, to taste
  • 1 cup chicken stock
  • 2 tablespoons butter
  • Fresh rosemary and thyme sprigs
  • ¼ cup dried cranberries

Instructions

  1. In a cast iron pan, sauté chicken thighs in oil on each side until browned, about 4-6 minutes. Remove and set aside.
  2. To the pan, add green apples and red onion. Season well with salt and pepper, then return the chicken to the pan.
  3. Add chicken stock,  butter, sprigs of fresh rosemary and thyme. Sprinkle dried cranberries all around the pan and heat in 400 degree F oven for 15 minutes or until chicken is cooked through.
