
Simple and satisfying any night of the week, this stuffed pepper recipe is the perfect way to use up ground beef.
Ingredients
- 6 'Sweet Stuff' peppers (or the stuffing pepper of your choice)
- ½ lb ground beef
- Olive oil
- 1 diced tomato
- ½ small diced onion
- ½ tsp dried basil
- ½ tsp garlic powder
- ½ tsp dried oregano
- ½ tsp salt
- ½ tsp pepper
- 1 cup shredded mozzarella
Ingredients
- Cut the tops off your peppers and scoop out seeds and membrane. Chop what remains from the tops and set aside for your stuffing.
- In a large skillet sauté ground beef in a few tablespoons of olive oil for about 8 minutes, breaking up into small chunks.
- Add diced tomato, diced onion and 4 Tbs chopped pepper set aside from the tops; sauté 5 more minutes.
- Let cool slightly and stir in dried basil, garlic powder, dried oregano, salt, pepper and shredded mozzarella.
- Fill prepared peppers with mixture and bake at 350 degrees F for 45-60 minutes or until browned and pepper looks just softened.
