Classic Beef Stuffed Peppers

Simple and satisfying any night of the week, this stuffed pepper recipe is the perfect way to use up ground beef.

Ingredients

  • 6 'Sweet Stuff' peppers (or the stuffing pepper of your choice)
  • ½ lb ground beef
  • Olive oil
  • 1 diced tomato
  • ½ small diced onion
  • ½ tsp dried basil
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp salt
  • ½ tsp pepper
  • 1 cup shredded mozzarella

Ingredients

  1. Cut the tops off your peppers and scoop out seeds and membrane. Chop what remains from the tops and set aside for your stuffing.
  2. In a large skillet sauté ground beef in a few tablespoons of olive oil for about 8 minutes, breaking up into small chunks.
  3. Add diced tomato, diced onion and 4 Tbs chopped pepper set aside from the tops; sauté 5 more minutes.
  4. Let cool slightly and stir in dried basil, garlic powder, dried oregano, salt, pepper and shredded mozzarella.
  5. Fill prepared peppers with mixture and bake at 350 degrees F for 45-60 minutes or until browned and pepper looks just softened.
