
Bake these cookies for Santa and leave a crunchy carrot for his reindeer, too!
Ingredients
For Cookies:
- ½ cup unsalted softened butter
- ½ cup brown sugar
- ½ cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 1 ¼ cups all-purpose flour
- ½ tsp baking soda
- ½ tsp baking powder
- 1 tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp salt
- 2/3 cup shredded carrots
- ¼ cup finely chopped walnuts
For Frosting:
- 4oz cream cheese
- A few tablespoons of milk
- 2 Tbs powdered sugar
- ¼ tsp vanilla extract
Instructions
- In the bowl of a stand mixer, cream together softened butter, brown sugar and granulated sugar for 1-2 minutes. Add 1 egg and 1 tsp vanilla extract and mix to combine.
- In a medium bowl, whisk together all-purpose flour, baking soda, baking powder, cinnamon, nutmeg and salt.
- Add dry mixture to wet mixture and stir to combine. Fold in shredded carrots and finely chopped walnuts.
- Scoop 2 Tbs balls of batter onto a parchment lined baking sheet and bake at 350 degrees F for 16-20 minutes. Let cool completely.
- In a small pot over low heat, melt cream cheese with a few tablespoons of milk, stirring constantly. Add powdered sugar and ¼ tsp vanilla extract and stir well. Put frosting in a piping bag or ziplock bag and decorate your cookies!
