Carrot Cake Cookies

A plate of carrot cake cookies drizzled with cream cheese icing, served alongside fresh carrots and a glass of milk.

Bake these cookies for Santa and leave a crunchy carrot for his reindeer, too!

Ingredients

For Cookies:

  • ½ cup unsalted softened butter
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • 2/3 cup shredded carrots
  • ¼ cup finely chopped walnuts

For Frosting:

  • 4oz cream cheese
  • A few tablespoons of milk
  • 2 Tbs powdered sugar
  • ¼ tsp vanilla extract

Instructions

  1. In the bowl of a stand mixer, cream together softened butter, brown sugar and granulated sugar for 1-2 minutes. Add 1 egg and 1 tsp vanilla extract and mix to combine.
  2. In a medium bowl, whisk together all-purpose flour, baking soda, baking powder, cinnamon, nutmeg and salt.
  3. Add dry mixture to wet mixture and stir to combine. Fold in shredded carrots and finely chopped walnuts.
  4. Scoop 2 Tbs balls of batter onto a parchment lined baking sheet and bake at 350 degrees F for 16-20 minutes. Let cool completely.
  5. In a small pot over low heat, melt cream cheese with a few tablespoons of milk, stirring constantly. Add powdered sugar and ¼ tsp vanilla extract and stir well. Put frosting in a piping bag or ziplock bag and decorate your cookies!
