Butternut Squash Steaks

Pan-seared butternut squash rounds on a plate, topped with browned garlic butter, a garlic clove, and a sprig of thyme.

Dress up rounds of your favorite winter squash with a drizzle of browned garlic butter!

Ingredients

  • 1 butternut squash (neck portion only)
  • 1 Tbsp avocado oil
  • Salt and pepper, to taste
  • 2 Tbsp butter
  • 3 garlic cloves, smashed
  • A few sprigs of thyme

Instructions

  1. Peel the neck of 1 butternut squash and cut into 3/4” thick rounds.
  2. Heat avocado oil in a cast iron pan and add squash steaks. Cook over medium-high heat, turning every 5 minutes, seasoning both sides with salt and pepper. Cook until nicely caramelized and tender.
  3. Add butter, a few sprigs of thyme, and garlic to the pan. Let it cook for a few more minutes, turning the squash to coat in butter. Serve with a bit more salt and pepper, and a drizzle of the garlic-thyme butter.
