Breakfast Salad with Potatoes

Frisée salad with soft-boiled eggs, bacon, and fingerling potatoes on a serving platter.

For an easy breakfast for a group, try making a platter of hearty salad with frisse as the base.

Ingredients

  • Frisée (enough to cover a large platter)
  • Bacon, cooked until crispy
  • Eggs (e.g., 6-minute soft-boiled)
  • Fingerling potatoes, boiled or steamed
  • ½ cup olive oil
  • 2 tbsp grainy mustard or Dijon
  • 2 tbsp white wine vinegar
  • 1 shallot, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • Optional: flaky sea salt, extra pepper for garnish

Instructions

  1. Make crispy bacon, your favorite cooked egg (like a 6-minute soft boiled) and boiled or steamed fingerling potatoes.
  2. Cook the bacon until crispy. Prepare your preferred style of eggs—6-minute soft-boiled works great. Boil or steam the fingerling potatoes until tender.
  3. In a jar, combine olive oil,  grainy mustard or Dijon, white wine vinegar, minced shallot, salt and pepper. Shake well to mix.
  4. Toss the frisée and potatos in the dressing and then drizzle the remaining over the entire salad. Finish with a sprinkle of flaky sea salt and freshly ground black pepper.
