
For an easy breakfast for a group, try making a platter of hearty salad with frisse as the base.
Ingredients
- Frisée (enough to cover a large platter)
- Bacon, cooked until crispy
- Eggs (e.g., 6-minute soft-boiled)
- Fingerling potatoes, boiled or steamed
- ½ cup olive oil
- 2 tbsp grainy mustard or Dijon
- 2 tbsp white wine vinegar
- 1 shallot, minced
- ½ tsp salt
- ½ tsp black pepper
- Optional: flaky sea salt, extra pepper for garnish
Instructions
- Make crispy bacon, your favorite cooked egg (like a 6-minute soft boiled) and boiled or steamed fingerling potatoes.
- Cook the bacon until crispy. Prepare your preferred style of eggs—6-minute soft-boiled works great. Boil or steam the fingerling potatoes until tender.
- In a jar, combine olive oil, grainy mustard or Dijon, white wine vinegar, minced shallot, salt and pepper. Shake well to mix.
- Toss the frisée and potatos in the dressing and then drizzle the remaining over the entire salad. Finish with a sprinkle of flaky sea salt and freshly ground black pepper.
