
Crisp apples, plus cold-hardy kale and beets, are a winning combo in this colorful fall or winter salad.
Ingredients
- 1 tbsp Dijon mustard
- 1 clove garlic, grated
- Juice of 1 small lemon
- ⅓ cup olive oil (plus more for drizzling, if desired)
- 1 large bunch kale, cleaned and torn into pieces
- 2 apples, cored and sliced
- 1 medium golden beet, peeled and cut into matchsticks
- 1 medium candy-stripe (Chioggia) beet, peeled and cut into matchsticks
- ½ red onion, thinly sliced
- Crumbled goat cheese
- Salt and pepper, to taste
Instructions
- In a large bowl, whisk together the Dijon mustard, grated garlic, and lemon juice until well combined.
- Add the torn kale and massage it with the dressing until softened.
- Next, add the sliced apples, beets, and red onion. Toss gently to combine.
- Season with salt and pepper, then top with crumbled goat cheese and a drizzle of olive oil, if desired.
