Cilantro is the perfect garnish for this colorful side dish, packed with fresh vegetables and bold flavors.
- In a large bowl, combine 3 cups shredded cabbage, 2 large shredded carrots, 1 bunch sliced green onions, 1 thinly sliced red bell pepper and a handful of chopped cilantro.
- In a small mason jar, combine 3 Tbs sesame oil, 2 Tbs soy sauce, juice and zest of 2 limes and 2 Tbs peanut butter; shake well. Pour over slaw and toss until well coated.
- Garnish with sesame seeds, roasted peanuts and more cilantro if desired.
