‘Red Dragon’’ is one beautiful cabbage. Bicolor Napa variety yields lovely clusters of subtly flavorful leaves: dark, deep-purple on the inside, radiant green on the outside. Napa cabbage is the indispensable ingredient in Chinese and Korean cuisines. Crisp, flavorful oval leaves are used in preparing kimchi, the spicy, earthy mixture of fermented vegetables that is the Korea’s national dish. Leaves impart nuanced, sweet flavor to stir fries, stews and soups; fresh leaves make for picturesque cole slaw, and a colorful accent to salads. Napa cabbage grows year-round.
