Is there anything sweeter than a fruit crumble straight out of the oven? Nope, not if you’ve tried this summery skillet dessert.
Ingredients:
For filling
3 sliced peaches
6oz blackberries
1 lemon, zest and juice
1 Tbs granulated sugar
1 Tbs flour
½ tsp ground ginger
½ tsp ground cinnamon
Pinch of salt
For topping
4 Tbs unsalted butter, cubed
½ cup rolled oats
½ cup flour
½ tsp salt
1 tsp vanilla
3 Tbs brown sugar
Vanilla ice cream for serving
Recipe:
- Toss sliced peaches, blackberries, lemon zest and juice, granulated sugar, 1 Tbs flour, pinch of salt, ground ginger and ground cinnamon together in a cast iron skillet.
- In a small bowl, combine cubed butter, rolled oats, ½ cup flour, ½ tsp salt, vanilla and brown sugar. Use your fingers or a pastry cutter to work the butter into the mixture until small chunks are formed.
- Sprinkle crumble mixture over the fruit in skillet and bake at 400 degrees F for 40 minutes or until fruit is bubbly and crumble is browned. Serve warm with vanilla ice cream.
