
Is there anything sweeter than a fruit crumble straight out of the oven? Nope, not if you’ve tried this summery skillet dessert.
Ingredients
For filling:
- 3 sliced peaches
- 6oz blackberries
- 1 lemon, zest and juice
- 1 Tbs granulated sugar
- 1 Tbs flour
- ½ tsp ground ginger
- ½ tsp ground cinnamon
- Pinch of salt
For topping:
- 4 Tbs unsalted butter, cubed
- ½ cup rolled oats
- ½ cup flour
- ½ tsp salt
- 1 tsp vanilla
- 3 Tbs brown sugar
- Vanilla ice cream for serving
Instructions
- In a cast-iron skillet, combine sliced peaches and blackberries with sugar, flour, a pinch of salt, ground ginger, ground cinnamon, lemon zest, and lemon juice. Toss until the fruit is evenly coated.
- In a small bowl, combine cubed butter, rolled oats, flour, brown sugar, salt, and a splash of vanilla. Use your fingers or a pastry cutter to work the butter into the mixture until it forms small, crumbly chunks.
- Sprinkle the crumble evenly over the fruit, then bake at 400°F for about 40 minutes, or until the fruit is bubbly and the topping is golden brown. Serve warm with a scoop of vanilla ice cream for the perfect finish.
