Filet Beans
Filet Beans, or haricots verts, are varieties bred to be slender. Filet beans are grown just like regular beans, but harvested young. The gauge is thickness: fillets should be picked when less than 1/8" thick, regardless of length, though most will be 4-6" long. True Filet Beans get tough and stringy once they reach snap bean size, so harvest frequently when they are still small!
