Tomato Herb Frittata

Preheat oven to 400 degrees F. Saute a small diced onion in olive oil until soft. Add 1 pint halved cherry tomatoes,  a large handful of chopped herbs like dill, basil and chives,  and 6 whisked eggs and remove from heat. Sprinkle with goat cheese, salt and pepper and bake for 15-20 minutes or until done in the center. Serve topped with mixed lettuces and more herbs, a drizzle of olive oil and a some chopped shallots.
