Spring Grain Salad

Fresh peas, rosy radishes and tender asparagus star in this seasonal dish.


2 cups arugula
½ cup pepitas
2 cloves garlic
1 lemon
2 cups cooked wheat berries
1 cup peas
1 cup sliced radishes
1 cup thinly sliced asparagus
¼ cup chopped dill
¼ cup chopped chives
Salt and pepper
Olive oil


1. In the bowl of a food processor, combine arugula, pepitas, garlic, lemon juice and zest, and ½ tsp salt and pepper. Pulse until finely chopped. Slowly add olive oil and run until combined.

2. In a large bowl, combine cooked wheat berries, peas, sliced radishes, thinly sliced asparagus, chopped dill and chopped chives

3. Stir in pesto until mixture is well coated. Season to taste with salt and pepper; add more olive oil if needed to loosen the consistency.
