Slice sweet potatoes in purple, white and orange to bake this vibrant skillet dish!
- In a cast iron skillet, shingle 1/8" thick round slices from 6 medium assorted color sweet potatoes (or yams).
- Dot all over with 3 Tbs butter, ½ cup heavy cream, 1 cup broth, salt, pepper and a sprinkle of fresh thyme.
- Bake covered at 400 degrees F for 30 minutes.
- Remove foil or cover and bake for an additional 15-20 minutes, or until potatoes are tender.
