Pumpkin & Goat Cheese Pasta

Warm up a cool night with this rich, earthy pasta dish.

 

Recipe:

 

  1. In a large skillet saute chunks of peeled and seeded pumpkin with 1 diced onion and olive oil until tender
  2. Cook ½ lb of your favorite pasta noodle, drain and save ½ cup of pasta water.
  3. Add pasta to skillet with 4 oz of reserved pasta water, 4 oz of goat cheese and chopped sage; sauté until sauce comes together.
  4. Serve with lots of shredded parmesan cheese!
