Warm up a cool night with this rich, earthy pasta dish.
Recipe:
- In a large skillet saute chunks of peeled and seeded pumpkin with 1 diced onion and olive oil until tender
- Cook ½ lb of your favorite pasta noodle, drain and save ½ cup of pasta water.
- Add pasta to skillet with 4 oz of reserved pasta water, 4 oz of goat cheese and chopped sage; sauté until sauce comes together.
- Serve with lots of shredded parmesan cheese!
