Toss crisp snow peas with chopped greens, such as spinach or beet greens, to prepare this springy dish.
- Add 10oz thinly sliced sirloin or NY strip steak to a hot pan with 1 Tbs olive oil and sear on each side. Remove to a plate.
- To the pan, add 3 thinly sliced cloves garlic, 1 small knob of ginger peeled and julienned and 1 small red onion sliced. Cook over medium high heat for a few minutes or until onions are tender, adding more oil if garlic begins to burn.
- Add about 2 cups snow peas and a large handful of chopped greens. Sauté until just wilted, then stir in ½ tsp salt, 2 Tbs sesame oil, 1 Tbs soy sauce and a sprinkle of sesame seeds. Stir to coat.
- Return steak to pan to heat through, then serve stir fry with rice. Garnish with extra sesame seeds if desired.
