Broccoli Soup

Nutrient-rich broccoli loves to grow in cooler weather – and makes a wonderful main ingredient for soup!


1. Sauté ½ onion, 2 cloves garlic and 1 head broccoli in olive oil for about 6 minutes.

2. Add chicken stock and simmer until tender.

3. Blend until smooth and thin with water or more stock if necessary. Season with salt and pepper and throw in a bunch of herbs for garnish.
