This colorful and fresh fall side dish combines earthy beets and zesty citrus.
Recipe:
- Wrap beets in foil and bake for 1 hour at 400 degrees F until tender when pierced with a fork.
- When cool, peel and slice beets into wedges. Layer on a platter with your favorite peeled, sliced citrus fruit like oranges, grapefruits and Meyer lemons.
- Sprinkle with pomegranate seeds and garnish with mint, chives, olive oil and pepper.
