In a blender, puree together 1 ripe avocado with juice of 1 lemon, 1 finely diced shallot,
1/8 cup rice wine vinegar and slowly blend in 1/4 cup extra virgin olive oil. Season with salt
and pepper to taste. For a creamier dressing, add 1/4 cup plain yogurt or 1 diced hot pepper
for extra zing. Serve on the side with a spoon for individual serving.
