A key ingredient in Indian cuisine, cardamom is prized for its spicy-sweet flavor, smoky aroma, and cool, mint-like afterglow. Tropical ginger relative produces a profligacy of small red cranberry-sized pods plucked when three-quarters ripe. One of the most expensive spices (after saffron and vanilla), cardamom pods or seeds—ground or whole—flavor Indian dishes and drinks (think Chai); in Scandinavia, herb spices up both baked goods and ground meat; in Arab countries, cardamom coffee symbolizes hospitality. Harvest begins after the second growing season.
