Yield: 6 large fritters
2 medium shredded zucchini
½ tsp ground cumin
¼ tsp salt
¼ tsp garlic powder
½ onion shredded or diced
½ cup all-purpose or gluten-free flour
For serving: soft boiled eggs, Greek yogurt, sliced chives
1. Combine shredded zucchini, egg, ground cumin, salt, garlic powder, shredded or diced onion and flour. Stir well to combine.
2. Heat ¼ inch of canola oil in a large skillet and pan fry ½ cup scoop of batter, flattening slightly with a spatula for 4 minutes per side until golden brown.
3. Serve with soft boiled egg, a dollop of Greek yogurt and sliced chives.
