Color your rice bowl with a bright medley of beets, avocado and herbs.
Recipe:
- Toss cooked and cooled wild rice with chopped roasted beets, some thinly sliced peeled raw beets, diced red onion, diced avocado, pistachios and a handful of chopped parsley and chives.
- Stir in olive oil, red wine vinegar, salt and pepper and serve at room temperature or chilled.
