Recipe:
1. Toss 2 chopped sweet potatoes and 1 large sliced onion with olive oil, curry powder and salt and spread on a rimmed baking sheet.
2. Toss cauliflower florets with sesame oil and chili garlic paste and add to baking sheet.
3. Roast all the vegetables at 400 degrees Fahrenheit for 25-30 minutes or until softened.
4. Serve roasted vegetables over brown rice with sliced avocado and thinly sliced scallions. Garnish with sesame oil, sesame seeds and flaky salt.
