Turkey Butternut Chili

Turkey Butternut Chili

The whole family will want seconds of this hearty weeknight meal.

 

Ingredients:

 

1 lb ground turkey

1 yellow onion, diced

1 small butternut squash, peeled and diced

A few cloves of garlic, minced

Olive oil

1 Tbsp cumin

1 Tbsp coriander

1 Tbsp apple cider vinegar

1 can of white beans, drained

2 cups chicken stock

Salt and pepper, to taste

Chopped cilantro

 

Recipe:

 

  1. Sauté ground turkey, yellow onion, butternut squash and minced garlic in olive oil in a Dutch oven until lightly browned.
  2. Add cumin, coriander and apple cider vinegar; sauté until fragrant.
  3. Add white beans and chicken stock. Simmer until squash is tender, about 20-25 minutes.
  4. Season with salt and pepper and stir in chopped cilantro to serve.
