Recipe:
Combine ribbons of swiss chard, shaved celery and a handful of celery leaves with Dijon mustard, zest and juice of 1 lemon, 1 diced shallot, olive oil and shredded parmesan. Massage dressing into leaves, season with salt and pepper and serve.
