Spinach & Rice Stuffed Peppers

These colorful stuffed peppers are soon to be a weeknight favorite!

Ingredients:

8 bell peppers, plus 1 cup diced pepper for filling
1 diced medium onion
3 cloves sliced garlic
2 cups cooked brown rice
1/2 lb frozen chopped spinach
14oz crushed tomatoes
14oz can garbanzo beans
1 tsp dried oregano
1 tsp dried basil
Salt and pepper
Shredded parmesan cheese

Recipe:

1. Sauté diced medium onion and 1 cup diced pepper in olive oil with sliced garlic cloves until softened.

2. Add cooked brown rice, frozen chopped spinach, crushed tomatoes and drained and rinsed garbanzo beans. Stir in dried oregano, dried basil and salt and pepper to taste.

3. Halve 8 peppers; remove seeds and membranes with a scissors. Fill halved peppers and top with shredded parmesan.

4. Bake at 400 degrees Fahrenheit for 30-35 minutes or until peppers are softened.
