Slice your zucchini and eggplant, then fire up the grill to make this herby, smoky taste sensation.
1-2 summer squash or zucchini, sliced
1 medium eggplant, sliced
4 Tbs olive oil
2 Tbs garam masala
1 tsp ground coriander
1 tsp turmeric
½ tsp onion powder
½ cup cilantro
½ cup mint
1 clove garlic
1 small knob of peeled ginger
- Combine sliced summer squash and eggplant with olive oil, garam masala, ground coriander, turmeric and onion powder. Toss to coat and grill vegetable slices about 2-3 minutes on each side until nicely charred.
- Meanwhile, in a food processor, combine cilantro, mint, jalapeño, garlic and peeled ginger; pulse to chop. Slowly drizzle in water and blend to desired consistency.
- Serve grilled vegetables with spicy chutney and crumbled feta. Enjoy!
