Try cooking spaghetti squash in an Instant Pot for a quick vegetarian dinner.
Recipe:
- Halve or quarter your spaghetti squash, depending on size, and scrape out the seeds.
- Place prepared squash on trivet in an Instant Pot and add 1 cup water. Cook on manual high for 8 minutes and quick release when done. Once cool enough to handle, scrape the squash into strands.
- Combine cooked spaghetti squash with sliced roasted red bell peppers, chopped kalamata olives, chopped fresh parsley, crumbled feta and a generous drizzle of olive oil. Season to taste with salt and pepper.
