Greek-Style Spaghetti Squash

Try cooking spaghetti squash in an Instant Pot for a quick vegetarian dinner.

 

Recipe:

 

  1. Halve or quarter your spaghetti squash, depending on size, and scrape out the seeds.
  2. Place prepared squash on trivet in an Instant Pot and add 1 cup water. Cook on manual high for 8 minutes and quick release when done. Once cool enough to handle, scrape the squash into strands.
  3. Combine cooked spaghetti squash with sliced roasted red bell peppers, chopped kalamata olives, chopped fresh parsley, crumbled feta and a generous drizzle of olive oil. Season to taste with salt and pepper.
