Sautéed Cauliflower & Shallots

Kick your cauliflower side dish up a notch with shallots, capers and zesty Dijon.

 

Recipe:

 

  1. Boil or steam cauliflower florets until just barely tender.
  2. Sauté sliced shallots in olive oil until tender.
  3. Stir in 3 Tbsp capers, 1 Tbsp Dijon and a splash of white wine vinegar.
  4. Add cauliflower and sauté over high heat until dressing is absorbed and cauliflower gets a little brown.
  5. Salt and pepper to taste and garnish with chopped parsley.
