Kick your cauliflower side dish up a notch with shallots, capers and zesty Dijon.
Recipe:
- Boil or steam cauliflower florets until just barely tender.
- Sauté sliced shallots in olive oil until tender.
- Stir in 3 Tbsp capers, 1 Tbsp Dijon and a splash of white wine vinegar.
- Add cauliflower and sauté over high heat until dressing is absorbed and cauliflower gets a little brown.
- Salt and pepper to taste and garnish with chopped parsley.
