Roasted Spiced Carrot Dip

Hummus isn’t the only pita chip companion. Use your carrot harvest to whip up this delicious alternative.



4 lbs chopped carrots

½ medium chopped onion

4 cloves garlic

½ cup to 1 cup olive oil + 4 Tbs

1 Tbs za’atar

½ tsp ground coriander

½ tsp garlic powder

¼ tsp ground cinnamon

Juice of ½ lemon

2 Tbs tahini

Salt and pepper to taste

Fresh cilantro



  1. Combine chopped carrots, onion, garlic, 4 Tbs olive oil, za’atar, ground coriander, garlic powder and ground cinnamon. Roast at 400 degrees F for 35-40 minutes until tender and let cool.
  2. In a food processor or blender, combine carrot mixture with lemon juice, ½ cup to 1 cup olive oil and tahini, adding more olive oil or water to reach desired consistency.
  3. Season to taste with salt and pepper and garnish with more olive oil, za’atar and fresh cilantro. Serve with pita chips or your favorite crackers.
