Hummus isn’t the only pita chip companion. Use your carrot harvest to whip up this delicious alternative.
4 lbs chopped carrots
½ medium chopped onion
4 cloves garlic
½ cup to 1 cup olive oil + 4 Tbs
1 Tbs za’atar
½ tsp ground coriander
½ tsp garlic powder
¼ tsp ground cinnamon
Juice of ½ lemon
2 Tbs tahini
Salt and pepper to taste
- Combine chopped carrots, onion, garlic, 4 Tbs olive oil, za’atar, ground coriander, garlic powder and ground cinnamon. Roast at 400 degrees F for 35-40 minutes until tender and let cool.
- In a food processor or blender, combine carrot mixture with lemon juice, ½ cup to 1 cup olive oil and tahini, adding more olive oil or water to reach desired consistency.
- Season to taste with salt and pepper and garnish with more olive oil, za’atar and fresh cilantro. Serve with pita chips or your favorite crackers.
