What’s sweeter than peaches? These incredible creamy popsicles, made with just a handful of ingredients.
4 Tbs brown sugar
Vanilla beans or paste
1 (15oz) can full fat unsweetened coconut milk
1-2 Tbs honey
½ tsp ground cinnamon
- Chop peaches and toss with brown sugar, juice of lemon and vanilla bean paste or 1 scraped vanilla bean. Roast at 400°F for 12 minutes and cool.
- In a large bowl, whisk together unsweetened coconut milk with 1 tsp vanilla bean paste, honey and ground cinnamon. Pour coconut milk mixture into the bottom third of popsicle molds and freeze for 20-30 minutes.
- Divide roasted cooled peaches between molds and freeze 15 minutes more. Top with remaining coconut milk mixture and freeze 15 more minutes before adding sticks. Freeze overnight.
