If you’re growing broccoli, make sure to save this rigatoni recipe. Crispy, roasted florets taste delicious with goat cheese, a hit of lemon and fresh basil leaves.
Recipe:
1. Toss 1 head broccoli cut into florets with olive oil, salt, pepper and juice of ½ lemon. Spread out on a sheet tray.
2. Roast for 15-18 minutes at 425 degrees Fahrenheit until charred and crispy.
3. Add 1 can drained and rinsed chickpeas to broccoli and roast until warm, about 2-3 more minutes.
4. Toss with cooked rigatoni and garnish with crumbled goat cheese, lemon zest, basil and red pepper flakes. Season to taste with salt and pepper.
