Recipe:
- In a large bowl, combine thinly sliced zucchini with a handful of capers, chopped roasted salted almonds and freshly grated parmesan.
- Mix in zest and juice of 1 lemon, a spoonful of Dijon mustard, a splash of white wine vinegar, olive oil, salt and pepper.
