Got raspberries from your garden? Muddle them with mint to make this refreshing summer cocktail – or leave out the rum to make it a mocktail.
- In a cocktail shaker, muddle 8 mint leaves and 8 raspberries.
- Add 2 oz white rum, 1 oz lime juice, 1 oz simple syrup and ice.
- Shake well and strain into a glass filled with ice.
- Top with 4 oz soda water, then garnish with additional mint, lime and raspberries.
