Rainbow Carrots with Orange & Pomegranate

A touch of citrus turns roasted carrots into a delicious rainbow side dish!

 

Recipe:

  1. Roast 2 bunches of sliced rainbow carrots with 1 Tbs olive oil and 1 tsp salt at 400 degrees for 20 minutes.
  2. Add 3 Tbs unsalted butter and juice of 1 medium orange to sheet tray. Toss and roast 5-10 minutes more, until tender.
  3. Garnish with orange zest, ground black pepper and pomegranate seeds.
