Quick Pickled Beets

Grab a mason jar! This tangy salad topper is a breeze to prepare.

 

Recipe:

 

  1. Slice roasted or steamed beets into ¼-inch thin slices and place in a jar.
  2. Fill jar halfway with apple cider vinegar and top with water. Add a pinch of salt, then seal jar and shake well.
  3. Store in the refrigerator and taste after a few hours – they only get better as they sit!
