A fall classic. Bake slices of pumpkin perfection with a little sugar and spice.
1½ cups flour
1 tsp baking soda
½ tsp salt
½ tsp nutmeg
½ tsp cinnamon
½ tsp ground ginger
¼ cup butter, melted and cooled
1½ cups sugar
1 cup pumpkin puree
¼ cup olive oil
2 large eggs
- Combine flour, baking soda, salt, nutmeg, cinnamon and ground ginger.
- In another bowl, whisk together melted and cooled butter, sugar, pumpkin puree, olive oil and eggs.
- Combine wet and dry ingredients and pour into a greased loaf pan. Sprinkle with a little turbinado sugar and bake at 350 degrees F for about 1 hour or until a cake tester comes out clean. Let cool completely before slicing.
