An easy-peasy side dish for spring!
- Combine 1 cup cooked and cooled shelling peas with 2 cups sugar snap peas, ½ cup mint leaves and ½ cup basil leaves.
- Toss with zest and juice of 1 lemon, salt and pepper and 4 tablespoons of olive oil.
- Add crumbled feta or goat cheese and serve at room temperature or chilled.
