Pea Salad with Feta & Mint

An easy-peasy side dish for spring!

 

Recipe:

  1. Combine 1 cup cooked and cooled shelling peas with 2 cups sugar snap peas, ½ cup mint leaves and ½ cup basil leaves.
  2. Toss with zest and juice of 1 lemon, salt and pepper and 4 tablespoons of olive oil.
  3. Add crumbled feta or goat cheese and serve at room temperature or chilled.
