Pea & Mint Hummus

Pea & Mint Hummus

Dig into this smooth and creamy spring dip with fresh radish or cucumber slices!

 

Recipe:

 

  1. In a food processor, combine 2 cups fresh cooked or frozen defrosted peas, 1 can garbanzo beans, juice of 1 small lemon, 1 clove garlic grated, 1 tsp salt, and ¼ cup mint leaves and pulse until well chopped.
  2. With the machine running, slowly drizzle in ½-1 cup olive oil until desired thickness is reached.
  3. Serve with additional mint, fresh pepper and more olive oil with crackers or fresh crunchy crudité.
